These baked cabbage sliders cram all manner of good stuff into a crispy edged slider. Quinoa, eggs, cottage cheese, and a good amount of chopped cabbage all represent. I use one of my signature veggie burger moves here – anyone who has Super Natural Cooking (2007) might remember it. Instead of putting the sliders on a bun, I split them and load them with toppings. You basically turn the patty into the bun. When I first started making veggie burgers, I was finding that adding a bun just wasn’t working for me. Too starchy, too dry. I have notebooks filled with versions of these, and this is a current go-to. They’re adult and kid-friendly and you can swap in whatever shredded veggies you like – carrots, kale, beets, etc.

How to Make These Sliders

These little sliders come together quickly, particularly if you have a few cups of leftover quinoa on hand. I always cook extra quinoa, knowing it will come together into a quick lunch if I plan ahead a bit.

To make them you simply combine cooked quinoa, eggs, cottage cheese, beans, breadcrumbs, and the other ingredients in a bowl, then let the mixture sit for a few minutes.

Yes! The way I go about this is the following. First, consider making a double batch – it’s worth the extra effort to have a bunch of these on hand in the freezer. Form the raw mixture into patties, arrange on a parchment-lined plate of sheet pan and freeze. Transfer to a container and keep in the freezer. Bake per instructions straight from the freezer, tacking on a few minutes.

Can I Cook the Sliders in a Pan

Yes, absolutely! You can cook them in a skillet. Here’s how: Heat a splash of oil in a large, heavy skillet over medium-low heat, arrange sliders in so they have a bit of room between each. Cover, and cook for 7 to 10 minutes, until the bottoms are deeply browned. Turn up the heat if there is no browning after 10 minutes and continue to cook until the patties are browned. Carefully flip the patties with a spatula and cook the second sides for 7 minutes, or until golden. Remove from the skillet and cool on a wire rack while you cook the remaining patties. Alternatively, the quinoa mixture keeps nicely in the refrigerator for a few days; you can cook patties to order, if you prefer.

I saw this video a while back and have not been able to get it out of my head (Chef Anna Frazer with the masterpiece)!

I made it and loved it – only problem is that my kids aren’t huge on tahini (and I rarely have it on hand). So I have been making this same concept, but slightly more shortcut-y, more pantry-aligned for our house, and more kid-friendly for my fam.

And wow, we are loving it.

I am not kidding when I say this might be my favorite ground beef I’ve ever made. It’s caramelized and sticky and I found myself just eating it straight out of the bowl. The ground beef gets tossed with cornstarch to get it crisped, and then you’re adding teriyaki sauce and fresh-grated garlic. When the garlic hits the pan… lights out. It smells so good!

This sounds weird but I’ve brought this home as leftovers a few times and we’ll reheat it in the OVEN?! It caramelizes even a bit further and the edges of the noodles get a bit crispy and it’s so good.

My whole family will go for seconds.

  2. Cook Beef: Heat avocado oil in a pan over high heat; add ground beef and leave undisturbed for several minutes to get some browned spots. Break apart with a wooden spoon into small pieces.
  3. Caramelize the Beef: Add the cornstarch and quickly stir fry for 15-30 seconds. Then add garlic and teriyaki for a minute or so; it will sizzle and start to caramelize, plus it’ll smell amazing. Remove from pan, set aside and cover or place in a 350 degree oven to keep it warm.
  4. Sauté Veggies: In the same pan, sauté the white parts of the green onions and the veggies (adding more oil as needed).
  5. Cook Noodles: Boil noodles for 3 minutes or according to package directions; rinse with cold water to prevent stickiness.
  6. Toss Together: Add cooked noodles and most of the peanut sauce to the veggies in the skillet; toss to combine for 1-2 minutes (you’ll want to serve immediately while it’s still hot and silky).
  7. Finish: Plate noodles; add a scoop of beef on top. Garnish with green onions and lots of black pepper, and drizzle with remaining peanut sauce if you want!
