These muffins disappeared the second I baked them. I made a few with chocolate chips just for my sister and little brother, Oslo — they’re obsessed! They’re easy enough to make with kids, and Oslo loves adding the chocolate chips. They pack beautifully for school lunches, and they’re great for a fall gathering.

While Asher and Oslo are team chocolate chip, my mom and I love them with toasted, chopped pecans. They feel perfectly autumn, and add a lovely crunch.

Step 1: boil the cider

I love using spiced cider — no sugar added! Boil the cider on the stove until it’s reduced to about 1 cup. This concentrates the flavor and makes each muffin especially delicious with lots of cozy apple flavor.

Step 2: make the batter

Mix the browned butter with the eggs, honey, apple butter, brown sugar, and vanilla. Add the flour, baking powder, cinnamon, nutmeg, allspice, and cloves.

Stir in the chopped apples. I like to cut mine thinly with a mandolin, then chop them for little apple bits in every bite.

Step 3: bake the muffins

Fill the muffin cups almost to the top. Bake for about 30 minutes, until the tops are deeply golden and your kitchen smells incredible.

Step 4: add the topping

This next step is a yummy addition. Melt a bit more butter and brush the tops — and sides, if you’d like — of each muffin.

This homemade apple butter makes anything it touches taste like fall. 🙂

What is apple butter?

Apple butter is a thick, flavorful spread made with apples, sugar, and spices. No actual butter here! It’s essentially twice-cooked applesauce: you’ll simmer apples until they’re tender enough to puree. Then, you’ll cook the apple puree again with the sugar and spices. Once it reduces into a thick, fragrant spread, you have apple butter!

Ingredients You’ll Need

This apple butter recipe calls for 8 simple ingredients:

  • Fresh apples, of course! You’ll need 2 pounds, about 5 medium. For the smoothest texture, peel the apples before making this recipe.
  • Water – It helps the apples steam and soften without burning.
  • Sugar – I especially love the molasses-y flavor of brown sugar here, but feel free to use cane sugar if you prefer. A mix of the two would also be delicious!
  • Fresh lemon juice – Its tangy flavor balances the sweet sugar and apples.
  • Cinnamon, nutmeg, and cloves – For warm depth of flavor. Other warming spices would be great here too—feel free to use your favorites! Try adding ground ginger, cardamom, or even a pinch of allspice. Or skip the individual spices and add apple pie spice instead.
  • And sea salt – To make all the flavors pop!

What are the best apples for apple butter?

Many different types of apples work well in apple butter. Unlike in baked goods like apple pie or apple crisp, we don’t need the apples to hold their shape, so we have a little bit more flexibility when it comes to type and texture.

I love tart or sweet-tart apples like Granny Smith apples or Honeycrisp. McIntosh, Fuji, Gala, and Golden Delicious are good choices too.

How to Make Apple Butter

The most common method for how to make apple butter is in a slow cooker, but since I don’t actually own one (it’s true!), I prefer to make this small-batch recipe on the stovetop. It requires a little more stirring, but it comes together in much less time. Here’s how it goes:

Start by peeling and chopping the apples. I like to cut them into small pieces to help them soften quickly.

Then, simmer the apples until tender. Place them in a medium saucepan with the water. Simmer, covered, until the apples are soft, about 20 minutes.

Puree the apples. You can do this with an immersion blender in the pot or transfer the cooked apples to an upright blender and blend until smooth.

Cook the apple puree again with the sugar, cinnamon, nutmeg, cloves, lemon juice, and salt. Bring the mixture to a gentle boil, then reduce the heat to low. Cook, uncovered, until the mixture has a thick, spreadable consistency and rich brown color, 40 minutes to 1 hour.

Tip: Stir the apple butter often as it thickens. This will prevent it from burning or sticking to the bottom of the pan. It will also stop it from sputtering (and splashing hot apple butter all over your kitchen!).

Set aside to cool to room temperature, then enjoy on pancakes, biscuits, scones, oatmeal, yogurt and granola, toast, and more!

Let’s celebrate the cooler weather with a stack of warm apple pancakes! These apple-flavored pancakes are the perfect autumnal breakfast treat. They’re a simple weekend breakfast project that keeps well for quick weekday mornings (they freeze and thaw well, too).

This apple pancake recipe is made from scratch with freshly grated apple, which is enhanced by a touch of ground cinnamon. Tart apples like Honeycrisp or Granny Smith offer the most impactful flavor. You’ll see that I used Honeycrisp apples in this batch—they’re our family’s favorite, and they yield terrific pancakes.

You might already have everything you need to make these pancakes in your pantry. Let’s make some.

Apple Pancake Tips

You’ll find the full recipe below. Here are a few tips to help achieve pancake success.

Flour options include white whole wheat flour, regular whole wheat flour or all-purpose flour. I try to use whole-grain flours when I can, but all-purpose flour offers the most neutral flavor, allowing the apple to shine. Otherwise, you can use white whole wheat flour (now called “golden wheat” by King Arthur Flour) for all of the nutrition of whole wheat without the nutty flavor.

Lightly coat your griddle or skillet with oil. I cook my pancakes with avocado oil because it offers a high smoke point and neutral flavor (butter burns quickly). Whichever you use, be sure to wipe off the excess with a paper towel so it doesn’t start smoking.

Start by cooking just one pancake. Once you’ve practiced with one pancake and ensured that your skillet is adequately preheated, you can make more at once. Leave a couple of inches between each pancake to allow for easy flipping.

The pancakes are ready to flip when about 1/2-inch of the perimeter has turned from glossy to matte. The underside should be nicely golden at this point. If you’re uncertain, it’s best to wait a little longer than end up with a doughy mess.

As time goes on, dial down the heat. The skillet gets hotter the longer it’s on the stove. If your pancakes are burning on the outside before they are cooked through on the inside, your skillet is too hot. Turn down the heat a bit after every few pancakes.

Apple Pancakes

This apple pancake recipe incorporates freshly grated apple and ground cinnamon. These apple pancakes are wholesome, delicious and easy to make. Recipe yields 8 to 9 pancakes.

  1. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon and salt.
  2. In a smaller bowl, combine the buttermilk, egg, melted butter, maple syrup, and vanilla. Whisk until thoroughly blended.
  3. Pour the liquid mixture into the flour mixture. Add the grated apple. Stir just until combined (a few small lumps of flour are okay). Let the batter rest for 5 minutes so your pancakes will be nice and fluffy.
  4. Meanwhile, if you’re using an electric griddle, preheat it to 350 degrees Fahrenheit. Otherwise, heat a large stainless steel or nonstick skillet over medium-low heat. You’re ready to start cooking pancakes once a drop of water sizzles on contact with the hot surface. If necessary, lightly oil the cooking surface and wipe off the excess with a paper towel (nonstick surfaces likely won’t require any oil).
  5. Scoop a scant ¼ cup of batter onto the warm skillet, leaving a couple of inches around each pancake for expansion. Cook until small bubbles form on the surface of the pancakes, 2 to 3 minutes (you’ll know it’s ready to flip when about ½-inch of the perimeter is matte instead of glossy). Flip the pancakes, then cook until lightly golden on both sides, 1 to 2 minutes more.
  6. Repeat the process with the remaining batter, adding more oil and reducing the heat as necessary (I usually end up on low heat after a while—if the pancakes are turning too dark on the outside before they cook through, it’s too hot). Serve the pancakes immediately with toppings of your choice, or keep them warm in a 200 degree Fahrenheit oven.
  7. Leftover pancakes can be stored in the refrigerator for up to 4 days, or frozen* for up to 2 months. To reheat, stack leftover pancakes and wrap them in a paper towel before gently reheating in the microwave.

*Make your own buttermilk: Combine 1 cup milk of choice (dairy or non-dairy like almond milk) with 1 tablespoon apple cider vinegar or distilled vinegar. Let the mixture rest for 5 minutes, then stir again before using. See photos of the process here. 

Make it dairy free: Make your own buttermilk with non-dairy milk and replace the butter with avocado oil or extra-virgin olive oil. 

Make it egg free: I haven’t verified this, but you could likely omit the egg. 

Make it vegan: Follow the dairy-free and egg-free suggestions provided above.

Make it gluten free: Substitute Bob’s Red Mill’s gluten-free 1-to-1 flour. Or, you could try stirring the grated apple into my recipe for Almond Flour Pancakes—please let me know in the comments if you try that!

3. It’s Spooky Season! Halloween Favorites!


4. Never Underestimate the Power of Family.

This might sound random, but truly — never underestimate the power of family and how they can save you when you need it most. In my experience, no one is there for you more than family, in both the good times and the bad.

Last week I dropped my camera…again. I’m the queen of dropping cameras and have broken more lenses than I care to admit (it drives my brother Kai insane). Kai has taught me everything I know about photography, so whenever I have a camera issue, he’s the first person I call. I would never buy any new piece of equipment without him first giving it the stamp of approval.

The last time Kai was here, he ordered me a new camera and lens, swearing it was so much better than my very outdated setup. I believed him, but honestly, I was too afraid to try it, the thought of the learning curve stressed me out. So, the camera just sat.

Fast-forward to last week: I dropped my old camera mid-shoot, and this time it was completely done. I had no choice but to finally pull out that new camera. I was sure I’d plug it in and it wouldn’t work for me. But I couldn’t have been more wrong. It saved me — and I love it! If Kai hadn’t already purchased it, I would have been waiting a week for a replacement, totally stuck in the meantime.

It might seem like a small thing, but to me it was huge. I was so grateful. And it reminded me again how lucky I am to have my family. These are the people who love you unconditionally, who show up for you in the best and worst moments. And, if you’re extra lucky, they’ll think ahead and set you up for success when you don’t even realize you’ll need it.

I know everyone’s family looks different, but if you’re fortunate enough to have a strong family unit around you, never take it for granted. Love them deeply!

These bite-size apple fritters are crispy, tender, and full of apple flavor—and you won’t believe how easy they are to make. The simple batter is made with basic ingredients, including flour, sugar, melted butter, and milk, along with baking powder and eggs for lightness and lift. You’ll need two apples for this recipe, preferably a crisp, sweet variety, such as Rome or Gala. And while you won’t have to seek out any special equipment to make these fritters, you will need to do a bit of deep frying (we’ve got tips for making it a smooth and safe process). Serve them warm with a generous dusting of confectioners’ sugar for the ultimate fall treat.

Equipment Needs

Heavy-bottomed pot: Choose a medium to heavy pot for this recipe (a Dutch oven works well if you have one). A solid, heavier pot will hold its temperature better than a lighter one, which is key when deep-frying.

Thermometer: A deep-fry thermometer helps ensure your oil stays at the correct temperature while frying—too low and the fritters will end up pale and soggy; too hot and you run the risk of the exterior browning before the insides can cook through. If you don’t have a deep-fry thermometer, also known as a candy thermometer, check the temperature periodically with an instant-read thermometer.

Ice cream scoop: While not essential for this recipe, an ice cream scoop will form round, evenly sized fritters and make transferring the batter to the oil a snap. Alternatively, you can use two small spoons (one to scoop up the batter and the other to scrape it into the oil).

Baking sheet with wire rack: Once your fritters are golden and crispy, transfer them to a rimmed baking sheet lined with a cooling rack to drain. If you don’t have a wire rack that fits inside, you can line the baking sheet with a few layers of paper towels instead.

Spider or slotted spoon: If you have a spider—a metal skimmer commonly used in Asian cooking—pull it out for this recipe. Otherwise, use a slotted spoon to remove the golden fritters from the oil. In a pinch, you can use a pair of tongs.

The Best Apples for Apple Fritters

When choosing apples for this recipe, choose a firm, crisp variety that’s on the sweeter side, such as Rome, McIntosh, or Gala. Avoid Red Delicious and Golden Delicious apples, which can easily become mushy and fall apart when cooked. 

Deep-Frying Dos and Don’ts

DO use the right oil: When deep frying, use a neutral oil with a high smoke point, such as vegetable oil, peanut oil, corn oil, or safflower oil. Avoid those with lower smoke points, like olive oil, or ones that can leave food with an off, fishy flavor, like canola oil.

DO add food gently: To minimize the risk of burns, drop scoops of batter into the oil as gently as possible and not from too high up, which can result in splashing.

DON’T use a lid: Unlike when simmering or steaming, you never want to cover your frying oil with a lid. Doing so can raise the temperature too high, which runs the risk of a grease fire. (Do have a tight-fitting metal lid handy, however, in case of fire, so you can cut off the oxygen and extinguish the flame.)

DON’T crowd the pan: Adding too much food at once can cause the oil to drop in temperature, which impacts the taste and texture of your fritters (the oil should stay between 320°F and 350°F). Instead, add just a few scoops of batter at a time, which will also give the fritters room to bob and bubble around.

This baked apple oatmeal is like an apple pie meets cinnamon-y baked oatmeal and then it’s all topped with a generous drizzle of an easy homemade peanut butter caramel sauce. It’s a perfect breakfast for oatmeal lovers alike — myself included!

Now the team and I have created hundreds of overnight oats, oatmeal and baked oatmeal recipes. And this is the newest addition to the collection, and girrrrrl is it a good one. A Few Main Ingredients

  • Apples: I love the flavor and texture of Granny Smith apples for baking, but feel free to use your apple of choice. I do recommend peeling the apples as the skin can still be a bit too tough with this shorter bake time.
  • Quick-cooking oats and all-purpose flour: These two ingredients together provide the chewy base for this baked oatmeal.
  • Eggs: They act as a binder, helping the oatmeal hold its shape and giving it a nice fluffiness once baked. 
  • Pure maple syrup: This natural sweetener adds a touch of sweetness without being overly processed.
  • Unsweetened almond milk: This is the liquid base that helps cook the oats and keeps everything nice and moist. You can use regular milk too if you’re not avoiding dairy. 
  • Cinnamon: Apples and cinnamon are like peanut butter and jelly; they just work! You’ll find cinnamon in both the apple mixture and the oatmeal 😋.
  • Vanilla: A splash of vanilla extract is like a magic touch. It enhances all the other flavors in the recipe.

Be sure to use a large skillet that is deep enough for the apples and the oatmeal topping. A Dutch oven also works well!

Once your baked oatmeal has fully cooled, you can either cover the skillet with foil and store right in that (saves on dishes! 🙌🏻), or transfer into meal prep containers for easy single serve goodness.

Either way, store in the refrigerator for up to 5 days. While you can leave your baked oatmeal out overnight, it will last much longer in the fridge.

Peanut Butter Caramel Ingredients

  • Preheat the oven to 350ºF.

  • First, prepare the apples. Heat the coconut oil in a large, 12-inch oven-safe skillet or enamel pan over medium/high heat. When the coconut oil is melted, add the apples and let them cook for 1-2 minutes, stirring periodically.

  • Add the maple syrup and cinnamon to the apples and toss to coat. Cook for an additional 3-4 minutes or until the apples begin to brown. Remove from the heat and set aside.

  • Add all of the wet ingredients to a bowl and whisk until combined. Add the dry ingredients to the wet ingredients and mix.

  • Spread the apples over the bottom of the skillet and pour the oat mixture over the apples. Be sure the oat mixture is spread evenly over the apples. Bake the oatmeal for 20 minutes and remove from the oven.

  • While the oatmeal bake is in the oven, add the peanut butter, maple syrup, and coconut oil to a bowl. Heat on high for 30 seconds and stir to combine. Let the mixture sit to thicken.

  • Remove the oatmeal bake from the oven and serve with the peanut butter caramel.

  • What pan is used will determine the bake time. Enamel cast-iron pans run hotter than other pans. Be sure to check for doneness at 15 minutes to see if it is fully baked when using an enamel pan.
