This baked oatmeal has been my go-to breakfast this month—I’ve already made it 3 times! Bursting with blueberries, it’s healthy and delicious.





We’ve been spending August at our cottage in Michigan, where we’ve had a steady stream of guests. My mom, my sister, close friends… Every time someone comes to town, we go blueberry picking! So…my fridge? Currently packed with blueberries. 😊

I love eating them by the handful and tossing them into salads. But this month, my favorite way to use them has been in this blueberry baked oatmeal. I’ve made it 3 times already, and I don’t see myself stopping anytime soon.

Here’s why I love this baked oatmeal recipe:

  • It’s super satisfying. Whole rolled oats, almond butter, pecans, and fresh fruit fill this oatmeal bake with fiber, protein, and healthy fats. One slice easily keeps me full till lunch!
  • It tastes DELICIOUS. It’s crisp on top, soft in the middle, and filled with fruity, nutty flavor. In addition to the blueberries, I add mashed banana, which gives it a subtle banana bread-y taste.
  • You can make it ahead. This recipe keeps well in the fridge for up to 4 days! I love to reheat a slice for a quick and easy meal prep breakfast.

If you’re looking for new healthy breakfast ideas to add to your rotation, this recipe is the first thing I’d recommend. I’m not the only one who’s making it on repeat!

It’s cherry season here in the midwest and I AM HERE FOR IT! These cherry almond croissant baked oats are my the new top of my baked oatmeal obsession that truly goes back to the early 2000s. They’re inspired by almond croissants (omg so so good!), and the sweet cherry flavor is such a natural addition. I hope you love these as much as I do (and as much as my toddler Gus does!).

IDK how it took me so long to use cherries in more of the recipes on Fit Foodie Finds! I love snacking on fresh cherries on those hot summer days, but it’s honestly been an afterthought to try and incorporate them into my cooking. I’ve got this pistachio cherry granola, this yummy cherry crisp, and an OG FFF fave — these cherry pie energy balls, but this is the very first cherry oatmeal recipe that we’ve graced the site with. I could not be more excited to share this one with you all.

It’s a healthy breakfast or snack option: I’m always looking to add a little more protein and whole grains to my mornings, and this does just the trick.

GREAT breakfast for meal-prepping: I love making a big ol’ batch of baked oatmeal on Sundays to have on hand throughout the busy week.

Tastes like almond croissants stuffed with cherries: need I say more?! 😏😏😏

Fresh cherries: obviously crucial to this recipe! You’ll need to pit your cherries and slice them in half before stirring into the oatmeal bake. I like to slice few extra to sprinkle on top when serving.

Sliced almonds: also crucial to the almond croissant flavor! You’ll sprinkle a whole bunch of slivered almonds on the top of the oatmeal bake before putting in the oven, so they’ll get nice and toasty.

Almond extract: I cannot get enough of this flavor! It really amps up the almond croissant flavor, so I don’t recommend substituting for vanilla unless you absolutely must.

Rolled oats: using rolled oats in this recipe helps keep the texture chewy but not at all dense. Quick oats will also work, but it will change the texture somewhat. Steel cut oats will not work as a substitution.

To get the full almond croissant effect, please do not skip the powdered sugar! It truly is the cherry on top 😋😋, and completes that almond croissant flavor profile we all know and love.

Regardless of when you enjoy this cherry almond croissant baked oatmeal, it travels well, is delicious served hot or cold, and is just so dang good.

More Topping Ideas

When I’m having this for breakfast multiple times in one week, I like to switch up the toppings a bit for some variety (obviously my toddler appreciates this, too 😋). Here are some of my go-tos:

  • Fresh cherries (or really any sliced fruit)
  • Dollop of Greek yogurt or cream cheese
  • Maple syrup
  • Nut butter

Once your baked oatmeal has fully cooled, I like to slice it into single servings and place it into a glass, airtight container.

Store your baked oats in the refrigerator for up to 5 days. While you can leave it out overnight on the counter, they will last much longer in the fridge.

Add another sprinkle of powdered sugar when you’re ready to serve again.

Other Oatmeal Bakes and Recipes to Try

  • Preheat oven to 350℉ and spray a 9-inch by 9-inch baking dish with nonstick cooking spray.

  • Prep the cherries by removing the pits and cutting into quarters. Set aside.

  • Add the wet ingredients to a large bowl and whisk to combine.

  • Add the rolled oats, oat flour, baking powder, and salt to the wet ingredients and stir until well combined. Then add the cherries and stir one more time.

  • Transfer the batter to the prepared baking dish. Top with the sliced almonds.

  • Bake at 350℉ for 25-30 minutes or until the oatmeal bake has firmed up.

  • Remove from the oven and sprinkle powdered sugar on top before serving.

  • Save on the dishes and assemble this in the baking dish.

This baked apple oatmeal is like an apple pie meets cinnamon-y baked oatmeal and then it’s all topped with a generous drizzle of an easy homemade peanut butter caramel sauce. It’s a perfect breakfast for oatmeal lovers alike — myself included!

Fit Foodie Finds literally became famous for oatmeal recipes over a decade ago, and I haven’t stopped since! Now the team and I have created hundreds of overnight oats, oatmeal and baked oatmeal recipes. And this is the newest addition to the collection, and girrrrrl is it a good one. It’s part apple pie part baked oatmeal and 100000% delicious.

You can make it all in one skillet! Sautéing the apples on the stovetop, and then adding the oatmeal topping and finishing in the oven 😋😋😋

The peanut butter caramel drizzle — need I say more?! It’s made with just peanut butter, coconut oil and maple syrup, and oooof it’s just the icing on the cake for this oatmeal bake.

It’s such a stunning dish. 🥰 While this oatmeal bake is relatively easy to make, it’s gorgeous enough to serve at even the fanciest of brunches.

A Few Main Ingredients

  • Apples: I love the flavor and texture of Granny Smith apples for baking, but feel free to use your apple of choice. I do recommend peeling the apples as the skin can still be a bit too tough with this shorter bake time.
  • Quick-cooking oats and all-purpose flour: These two ingredients together provide the chewy base for this baked oatmeal.
  • Eggs: They act as a binder, helping the oatmeal hold its shape and giving it a nice fluffiness once baked. 
  • Pure maple syrup: This natural sweetener adds a touch of sweetness without being overly processed.
  • Unsweetened almond milk: This is the liquid base that helps cook the oats and keeps everything nice and moist. You can use regular milk too if you’re not avoiding dairy. 
  • Cinnamon: Apples and cinnamon are like peanut butter and jelly; they just work! You’ll find cinnamon in both the apple mixture and the oatmeal 😋.
  • Vanilla: A splash of vanilla extract is like a magic touch. It enhances all the other flavors in the recipe.

Deep Skillet

Use this skillet for your favorite one pot meals or other stove top recipes.

Be sure to use a large skillet that is deep enough for the apples and the oatmeal topping. A Dutch oven also works well!

Once your baked oatmeal has fully cooled, you can either cover the skillet with foil and store right in that (saves on dishes! 🙌🏻), or transfer into meal prep containers for easy single serve goodness.

More Baked Oatmeal Flavors

Peanut Butter Caramel Ingredients

  • Preheat the oven to 350ºF.

  • First, prepare the apples. Heat the coconut oil in a large, 12-inch oven-safe skillet or enamel pan over medium/high heat. When the coconut oil is melted, add the apples and let them cook for 1-2 minutes, stirring periodically.

  • Add the maple syrup and cinnamon to the apples and toss to coat. Cook for an additional 3-4 minutes or until the apples begin to brown. Remove from the heat and set aside.

  • Add all of the wet ingredients to a bowl and whisk until combined. Add the dry ingredients to the wet ingredients and mix.

  • Spread the apples over the bottom of the skillet and pour the oat mixture over the apples. Be sure the oat mixture is spread evenly over the apples. Bake the oatmeal for 20 minutes and remove from the oven.

  • While the oatmeal bake is in the oven, add the peanut butter, maple syrup, and coconut oil to a bowl. Heat on high for 30 seconds and stir to combine. Let the mixture sit to thicken.

  • Remove the oatmeal bake from the oven and serve with the peanut butter caramel.

  • What pan is used will determine the bake time. Enamel cast-iron pans run hotter than other pans. Be sure to check for doneness at 15 minutes to see if it is fully baked when using an enamel pan.
