Instructions

Preheat the oven to 350°F. Line a baking sheet with parchment paper. Mix the almond flour and baking powder together in a mixing bowl. In a separate bowl, stir together syrup, eggs, and vanilla extract. Mix wet and dry ingredients. Stir until a sticky dough forms and holds together. Fold in dried cranberries and pistachios and mix until evenly combined.

Drop heaping tablespoons of the dough onto the prepared baking sheet, at least one inch apart. To make the cookies crispier, press down the dough lightly with the flat bottom spatula or cup bottom. Bake until the edges are golden brown, about 16-18 minutes. Allow the cookies to cool on the pan for about 3 minutes, then transfer them to a wire rack to cool completely.

    These are excellent! We can’t do eggs, so I substituted one large banana, two Ener-G egg replacer, and 1/2 teaspoon baking powder, to replace the 4 eggs. The rest of the recipe I followed. They came out delicious and look a bit like drop biscuits lol. Wondering how you store them? Should refrigerate them or leave on the counter? Made these for Christmas and hope they last until then 😁

I didn’t know what to expect, but one bite of that soft, cakey cookie with the sweet vanilla and rich chocolate glaze, and I was hooked. From that day on, it became our little ritual. Every week, we’d go together and share one as a special treat. It wasn’t just about the cookie; it was about that quiet time we had together, catching up and creating a small moment that felt like ours.

Now, I love recreating that memory in my own kitchen, especially with this healthier take on the classic. These healthy black and white cookies taste just like the original, but they’re made with clean ingredients like almond flour, oat flour, and sugar-free sweetener. There’s no added sugar, no refined flour, and no butter. They’re still soft, sweet, and totally satisfying.

Instructions

To make the cookies:

  • Preheat your oven to 350°F and line two baking sheets with parchment paper.
  • In a medium bowl, whisk together almond flour, oat flour, baking powder, baking soda, and salt.
  • In a large bowl, cream the softened coconut oil, sugar-free sweetener, and lemon zest until light and fluffy.
  • Beat in the eggs and vanilla until smooth.
  • Alternately add the dry ingredients and Greek yogurt, mixing just until everything is combined.
  • Scoop about 2 tablespoons of dough per cookie onto the prepared baking sheets, leaving a couple inches between each. Flatten each mound into a round cookie about 3 inches wide and ½ inch thick.
  • Bake for 10–12 minutes, rotating the tray halfway through, until the cookies are lightly golden and set.
  • Let cookies cool on the pan for a few minutes, then transfer to a wire rack to cool completely before glazing.

To make the glaze:

  • In a bowl, mix the powdered sugar-free sweetener, 2–3 tablespoons almond milk, sugar-free syrup, and vanilla until smooth and spreadable.
  • Spread the vanilla glaze over one half of each cooled cookie and let it set.
  • Stir the cocoa powder into the remaining glaze, adding 1–2 more tablespoons of almond milk as needed.
  • Frost the other half of each cookie with the chocolate glaze. Let them fully set before serving or storing.
