Meet the peach cobbler of my dreams! This irresistible dessert features warm, bubbling peaches with a golden cobbler topping that’s craggy at the edges and tender inside. Make this recipe from mid-to-late summer when fresh peaches are at their peak.

This simple peach cobbler recipe is sweet but not too sweet, so the glorious peach flavor shines above all else. The filling is sweetened with honey, and the topping is lightly sweetened with lemony sugar—both of which impart some lovely complementary flavors that make this cobbler taste extra special. The recipe is not complete without some vanilla extract, cinnamon and yogurt for a light, buttermilk-like tang.

The buttery topping is made of almond flour, which offers a tender crumb and light almond flavor that pairs perfectly with ripe peaches. I tried making this cobbler with regular all-purpose flour and much preferred it with almond flour. Thanks to the almond flour, this recipe is gluten-free, whether you need it to be or not!

How to Make the Best Peach Cobbler

You’ll find the full recipe below. Here’s a brief preview of the process and why it works so well:

  1. Mix together the filling ingredients directly in your baking dish to avoid dirtying another dish. Bake the filling for about 20 minutes while you prepare the topping. With this two-step baking process, you’ll achieve a bubbly, condensed peach filling with a perfectly golden topping. If you try to bake it all together at once, the topping will turn too golden before the filling is done (I know because I tried).
  2. The topping comes together in a few simple steps. You’ll want to combine the sugar and lemon zest in a small bowl, and use your fingers to rub the zest into the sugar (this takes about 20 seconds and maximizes the lemon flavor). We’ll grate cold butter into the flour for a biscuit-like texture. Lastly, we’ll whisk together an egg with some yogurt before stirring into the flour for even dispersion.
  3. Dollop big spoonfuls of topping over the bubbling filling, and bake until the topping is lightly golden. Serve your cobbler with vanilla ice cream or whipped cream. Leftovers are fantastic the next day with Greek yogurt for breakfast!

Peach Tips

The only “hard” part about this recipe is finding great peaches. Wait to make it until you can find an abundance of ripe or nearly-ripe fresh peaches.

Peach selection and care

Look for medium-to-large peaches that are fragrant, unblemished and yield slightly to a gentle squeeze. Treat them gently so they don’t bruise.

If your peaches aren’t ripe yet, store them at room temperature until they are (you can speed their ripening by storing them in a paper bag, but give each peach some space so they don’t mold).

If your peaches are ripe already and you can’t bake the cobbler right away, store them in the refrigerator to keep them good for another day or two.

How to peel peaches

You don’t have to peel the peaches if you’re not bothered by some texture in your dessert (I didn’t mind it, but my husband did).

If you want to peel the peaches, lightly score an “x” about two inches wide at the base of each peach, gently dunk them into a big pot of boiling water for 30 seconds to 1 minute, then transfer them to an ice bath. Peel off the skin starting from the cuts on the bottom, and it will come off easily in strips.

How to cut your peaches

Slice your peaches into one-inch chunks instead of long strips. They offer perfect bites and don’t disappear to mush. This is a handy tip I picked up from Sally—thanks Sally!

Peach Cobbler with Almond Topping

This peach cobbler recipe features bubbly ripe peaches underneath a perfectly golden topping. The topping is made of almond flour, which offers lovely flavor and makes the recipe gluten free. Recipe yields about 9 modest servings.

Fresh peach filling

Topping

  1. Preheat the oven to 375 degrees Fahrenheit, then make the filling: In a 9-inch square baking dish, mix together the peaches, honey, starch, vanilla and cinnamon. Bake the filling for 20 to 25 minutes, until the mixture is bubbling around all four edges. 
  2. Meanwhile, prepare the topping: in a mixing bowl, combine the almond flour, baking powder and salt. Whisk gently until combined, and set it aside. 
  3. In a small-to-medium bowl, combine the sugar and lemon zest. Use your fingers to rub the zest into the sugar (this extracts more flavor from the lemon). Then, pour the mixture into the other dry ingredients and whisk to combine. Keep the bowl handy for the egg mixture. 
  4. Grate the butter on the large holes of a cheese grater into the flour, stirring as you grate so the butter doesn’t clump.
  5. In the smaller bowl, combine the yogurt and egg, and whisk until evenly combined. Pour the wet mixture into the dry mixture, and stir until well combined. It will look crumbly at first, but stir well until it comes together into a cohesive dough with streaks of butter. 
  6. Dollop one spoonful at a time over the hot filling, using the back of another spoon or your finger to help transfer each dollop. Sprinkle the turbinado sugar evenly over the dough, if using. 
  7. Bake 17 to 20 minutes until the filling is actively bubbling around the edges and the top is lightly golden. Let the cobbler rest for 5 to 10 minutes before serving. Serve with vanilla ice cream or whipped cream, if desired.

No Sugar Added Vegan Peanut Butter Pie

Ingredients:

  • 1 1/2 cups almond flour
  • 1/4 dark cacao powder
  • 1/4 cup coconut oil, melted
  • 1/4 cup date syrup (code HEALTHYHELPER saves $$) or 8-10 pitted medjool dates (soaked in water for at least an hour)
  • 1 cup natural peanut butter (unsweetened)
  • 1 can (13.5 oz) full-fat coconut cream, chilled in the refrigerator overnight
  • 2 tablespoons unsweetened almond milk
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional toppings: crushed peanuts, vegan chocolate chips, drizzle of melted peanut butter

Instructions:

  • In a mixing bowl, combine almond flour, cacao melted coconut oil, and maple syrup (or dates). Press the mixture into the bottom of a pie dish to form the crust. Place in the refrigerator to set while you prepare the filling.

Maven’s Quick Tips

Don’t Overmix. To keep your pie crust flaky I recommend not overmixing.

Keep it Cold. This goes along with not overmixing but be sure to keep your pie crust cold. While you’re mixing the filling I recommend placing the crust in the fridge or freezer.

Customize the Filling. Prefer blueberries to mixed berries? No problem! Want to use a different fruit? All good! Simply use 2 cups of your favorite fruit as the filling.

Make it ahead. The galette crust can be made several days in advance and stored in the fridge.

Ingredients in Almond Flour Galette

There are two components of this dessert: the crust and the filling. 

Here’s what you need for the crust:

  • Almond flour – make sure it’s flour and not almond meal!
  • Tapioca flour – a great thickening option that is gluten-free.
  • Coconut sugar – brown sugar works too.
  • Sea salt – to taste
  • Cold butter – the fat component – just be sure to make sure it’s straight from the fridge!
  • Egg – I like the sturdiness that an egg adds to a galette crust but note that you can omit it and use 2-3 tbsp of cold water instead (see note below with instructions).

Here’s what you need for the filling:

  • Mixed berries – the star of the show. Make sure you’re using fresh berries and not frozen which can lead to a runny filling. Blueberries, raspberries, blackberries and strawberries all taste delicious!
  • Lemon – we’re using the zest and the juice because they bring brightness to the filling.
  • Tapioca flour – again, a thickening agent.
  • Coconut sugar – can also use brown sugar.
  • Vanilla extract – brings all of the flavors together perfectly. 

How to Make a Berry Galette

STEP 1: MAKE THE CRUST

Add the almond flour, tapioca flour, coconut sugar and salt to a food processor and pulse to mix. Add in the cold butter and pulse until the butter becomes pebbly (like small rocks). Add in the egg and pulse until the dough comes together.

STEP 2: ROLL OUT CRUST

Remove the dough from the food processor and place between two sheets of parchment paper. Use a rolling pin to roll the dough into a 12 inch circle. Remove the top piece of parchment paper and place the bottom piece of parchment paper with the crust onto a baking sheet and put it in the fridge while you make the filling.

STEP 3: MAKE FILLING

In a large bowl combine berries, lemon zest + juice, tapioca flour, coconut sugar, vanilla extract, and cinnamon until berries are well-coated.

STEP 4: STUFF + BAKE

Remove crust from fridge and add filling to the center of the crust, leaving at least a 2 inch perimeter for folding over. Slowly fold crust over the filling all around the edges by using the parchment paper and folding it over the berries. Use your hands to fix any broken spots. Don’t worry if crust breaks, just repair with your hands and it will be totally fine once it’s baked. Place in the oven to bake for 25-30 mins or until golden brown around the edges. Let cool for 20 mins before serving.

Troubleshooting Tips

What is a galette?

A galette is a French pastry that is typically deconstructed or “free form” meaning that it isn’t shaped into a traditional pie pan or tart pan. It utilizes the same flaky pie crust that is then folded over a filling with a thick border leaving the center exposed. Galettes tend to be more rustic and casual and are easier to make because they require less bake time and fussy pie shaping.

Can I use different fruit?

Yes! Feel free to use 2 cups of your favorite mixed fruit or just 2 cups of your favorite berry.

My pie crust is falling apart – what should I do?

Galettes are supposed to look rustic so don’t worry if your crust doesn’t look perfect. Simply piece back together

Can I omit the egg?

Yes you can. But be sure to replace it with 2-3 tbsp of cold water. Start with 2 tbsp and add the 3rd tbsp if your crust is looking too dry. Some purists prefer a crust without egg so this is a good option.

Can I make this vegan?

If you’d prefer a vegan galette I’d recommend using this recipe and replacing the filling with the one listed below.

Is this galette gluten-free?

Yes this is a gluten-free galette recipe!

What if I can’t find tapioca flour?

Arrowroot flour works as a great substitute. Though it won’t have quite the same texture you could also replace with cornstarch.

Storage Instructions

Fridge: Store leftovers in an airtight container in the refrigerator for up to 3 days.

Freezer: You can freeze your crust for up to 3 months then allow to thaw before continuing with instructions. Alternatively you can make the galette and freeze it then place it directly into the oven to bake but note that you will have to add on several minutes to your bake time.
