Maven’s Quick Tips:

Use white quinoa. This makes for the best texture and flavor since it tends to be more neutral.

Uncooked + rinsed. No need to cook your quinoa first! Just be sure to rinse it to remove the saponins.

Use fresh or frozen. Either fresh or frozen blueberries can be used depending on the season.

Let cool before slicing. Allow your bars to rest for 20 minutes before cutting.

Enjoy for all meals. I consider these blueberry quinoa bars healthy and to be enjoyed at any meal…including breakfast! Perfect for meal prep or a freezer meal or snack too.

Over the years I’ve had some unexpected hit recipes. Usually when I make a recipe I know if it is going to be popular. Other times I share something I personally love but am not sure how it will land with my audience. These banana quinoa breakfast bars fall into the unexpected hit category. They taste delicious and have stellar ingredients but I wasn’t sure how a breakfast bar made with quinoa was going to go over with you.

Over the years it has become quite a popular recipe so I thought I would use it as inspo for these blueberry quinoa bars. These are similar with the difference being that there’s no bananas. I realize that some people don’t like bananas so this is a great option for anyone who doesn’t. Let me know what you think!

Ingredients in Blueberry Quinoa Bars

  • rolled oats – grab gluten-free oats if necessary.
  • uncooked white quinoa – the most neutral tasting quinoa with the lightest texture… perfect for these bars! Make sure you rinse the quinoa before using both for removing the outer coating and also for the final texture of the bars.
  • ground flaxseed – helps bind the bars together. It is effectively like using a flax egg in place of regular eggs.
  • applesauce – provides moisture and a light texture. Just be sure to buy the unsweetened kind so you can control the sweetness.
  • almond butter – You can also swap for a different nut butter or seed butter.
  • coconut oil – look for unrefined and/or organic coconut oil. Just be sure to melt it.
  • maple syrup – a hint of added sweetness! You could use honey but this recipe would no longer be vegan.
  • baking powder – helps the bars rise.
  • cinnamon – I love the combination of cinnamon and banana.
  • sea salt – to bring all of the flavors together
  • blueberries – of course! I like using fresh but frozen can also be used and make these blueberry quinoa bars enjoyable year round. You could also sub in a different berry, if desired.

How to Make Blueberry Quinoa Bars

STEP 1: COMBINE DRY INGREDIENTS

In a large bowl combine rolled oats, quinoa, baking powder, cinnamon and salt.

STEP 2: STIR IN WET INGREDIENTS

Add in applesauce, flax, almond butter, coconut oil and maple syrup. Stir until well-combined. Fold in blueberries. Let batter sit for 10 mins to let flax absorb some liquid.

STEP 3: BAKE

Add batter to baking dish and spread out evenly. Bake for 25-30 mins or until edges are crisp and center is cooked through.

STEP 4: SLICE + SERVE

Let sit for 20 mins before cutting into 9-12 squares and allow to cool completely.

Nope! I’ve tested this recipe with both cooked and uncooked quinoa and actually found the uncooked quinoa yielded an optimal result.

Do I have to use white quinoa?

I’d recommend it. Tri-color quinoa typically takes longer to cook so stick with white quinoa if you can.

Do I have to rinse my quinoa first?

Yes! Quinoa is coated in saponin which is bitter tasting and could result in a gross tasting breakfast bar! Add the quinoa to a fine mesh strainer and rinse under cold water before using in this recipe.

We love to make this roasted pumpkin seeds recipe after carving pumpkins in the fall. Crisp and golden brown, they’re an easy, delicious snack!

Let’s make roasted pumpkin seeds! Instead of tossing the seeds from your Halloween Jack-O-Lanterns this year, save them to make this roasted pumpkin seeds recipe. It’s a delicious fall snack or salad topper—the seeds come out nice and crunchy, with a toasty, nutty flavor that I absolutely love.

I’ve experimented with lots of different methods for how to roast pumpkin seeds over the years, and I’ve found that this simple one is my favorite. It calls for 3 ingredients (plus optional seasoning, if you like) and has 3 basic steps. Kiddos can help out here too. My son Ollie loves separating the seeds from the squishy pumpkin flesh!

Not carving pumpkins this fall? You can still make this recipe! It works well with the seeds from any type of winter squash. Butternut, delicata, spaghetti squash… They’re all fair game!

How to Roast Pumpkin Seeds

My method for how to roast pumpkin seeds has 3 easy steps:

  1. Cut
  2. Clean
  3. Bake

Let’s start with Step 1. If you’re carving a pumpkin, cut a circle around the stem and lift off the lid. Use a spoon to scoop the slimy flesh and seeds out of the pumpkin and to scrape them off the underside of the lid.

If you’re working with another type of winter squash, cut the squash in half vertically and use a spoon to scoop out the seeds. If the squash is too hard to cut, warm it whole in a 425°F oven for 10 minutes before slicing it open.

On to Step 2! Soak the seeds and attached flesh in a large bowl of water. The seeds should float to the top, making it easier to separate them from the stringy pumpkin flesh.

Transfer to a colander and rinse the seeds to remove any excess flesh.

Then, spread the seeds on a kitchen towel and blot them dry. Get them as dry as you can before you roast them. This will help them crisp up in the oven.

Finally, roast the seeds. Toss the dried pumpkin seeds with olive oil and salt, and spread them in a single layer on a parchment-lined baking sheet. Roast at 300°F for 35 to 45 minutes, stirring halfway, until golden brown and crisp.

That’s it! Allow the seeds to cool and crisp on the baking sheet for a few minutes before you season and serve.

How to Store Roasted Pumpkin Seeds

We often devour these right away, but leftovers keep well at room temperature for up to 5 days. Allow the seeds to cool completely before sealing them in an airtight container.

Recipe Tips

  • Dry the seeds before roasting. If your seeds are damp when you put them in the oven, they won’t crisp up as they bake. Make sure to dry them well before roasting.
  • Spread them in a single layer. If they’re crowded together, they’ll steam and soften instead of becoming golden brown and crunchy.
  • Spice them up! Want to take your roasted pumpkin seeds to the next level? Spice them up with smoked paprika, cayenne pepper, curry powder, or any spice blend you love. Lately, I’ve been tossing mine with a sprinkle of homemade chili powder when they come out of the oven. SO delicious!

This roasted pumpkin seed recipe is SO fun to make in the fall! You can use any type of winter squash seeds here – classic pumpkin, kabocha, butternut, delicata, acorn, etc. – but note that the roasting time will vary depending on the size of the seeds. The time listed below works well for larger seeds like pumpkin and kabocha. Smaller seeds will need less time.

2 easy flavor variations that you’ll absolutely love: Yep! I love topping these donuts with a simple blended cottage cheese + powdered sugar glaze and a generous helping of rainbow sprinkles. I’ve also tested these donuts tossed in cinnamon sugar, and that is so dang good, too 🥰🥰.

Key Ingredients Worth Highlighting

  • Cottage cheese: Blended cottage cheese is the protein powerhouse for these donuts!
  • Maple syrup: My go-to natural sweetener! It adds rich sweetness without overpowering the flavor of these donuts. Brown sugar also works.
  • Almond milk: Store-bought almond milk obviously works, but I love using my homemade almond milk! It’s sweetened with dates and the flavor is just so dang good.
  • Coconut oil: This is a great fat substitute for butter, and adds a subtle sweet coconut flavor to these donuts.
  • All-purpose flour: I have not tested these donuts with other varieties of flour, so please proceed with caution if you substitute!

Essential Equipment

  • Donut pan: You need a donut pan to make homemade donuts (obviously!), and because most donut pans make 6 donuts, I actually like to keep 2 on hand, so I can make the entire batch of 12 donuts at once.
  • Piping bag: I like to pipe the donut batter into the donut pan because it’s so much easier and less messy than spooning it in. If you don’t have a piping bag, you can use a Ziploc bag and cut the corner off to pipe the batter through.

How to Make Cottage Cheese Donuts

  1. Place the dry ingredients into a bowl and mix.
  2. Place all the wet ingredients (except the melted coconut oil), into a bowl and mix. Slowly add the dry ingredients to the wet and whisk together. Then, whisk in the coconut oil. 
  3. Add the batter to a piping bag and then pipe batter into each donut well.
  4. Bake the donuts for 8-10 minutes at 350℉.
  5. Prepare the glaze by adding the blended cottage cheese and powdered sugar to a bowl and stir together.
  6. Glaze the donuts and then top with rainbow sprinkles.
  7. ENJOY!

One thing I absolutely love about these donuts is the versatility to use different toppings! Most times, I’m glazing and sprinkling half of the batch, and then tossing the other half in a cinnamon sugar topping.

And because these donuts are made with simple ingredients and are protein-forward, I feel good about serving them to my kiddos at breakfast or for a sweeter snack or dessert. I love enjoying one of these donuts with a good ol’ cup of coffee.

  • Preheat the oven to 350℉ and spray a donut pan with non-stick cooking spray. Set aside.

  • Place the dry ingredients into a bowl and mix to combine. Set aside.

  • Place all the wet ingredients, except the melted coconut oil, into a bowl and whisk to combine. Slowly add the dry ingredients to the wet and whisk together. Then, whisk in the coconut oil.

  • Add the batter to a piping bag and then pipe batter into each donut well, about ¾ of the way full.

  • Bake for 8-10 minutes at 350℉. Allow the donuts to cool before adding the glaze.

  • Prepare the glaze. In a separate bowl, add the blended cottage cheese and powdered sugar and stir to combine. You may need to add more powdered sugar depending on how thick you want it.

  • Coat half the donuts in cinnamon sugar and dip half the donuts in the glaze. Top the glazed donuts with rainbow sprinkles while the glaze is still wet.

  • In step 6, feel free to coat or top the donuts in whatever you would like.
  • Cinnamon sugar topping: Love cinnamon sugar donuts? Use ⅓ cup granulated sugar + 1 tablespoon ground cinnamon instead of the glaze and sprinkles.

The magic lies in the flaxseed: As they swell and plump in hot water, they release a starchy gel that’s the key to holding the base together as it sets in the oven. The result is ethereally light and shatteringly crisp. Topped with a rippled layer of dark chocolate that allows roasted nuts and airy freeze-dried fruit, plus a light dusting of flaky sea salt, to cling to each bite. Kodiak protein muffins are a trend that I’m excited to share truly lives up to the hype! I upped the protein even more in this recipe by using a Core Power chocolate protein shake instead of milk, and wowwww are these muffins fluffy, delicious and obviously protein-packed (I’m talkin’ 10g of protein PER MUFFIN!).

All you need is 3 ingredients!

They’re protein-packed — 10g protein with only 153 calories per muffin!

Kid-approved — Gus and Bode both love these muffins as much as their mamas do, and if you have toddlers, you know that’s a major win!

Easy to Find Ingredients

All you need for these muffins is:

  • Kodiak Cakes Double Dark Chocolate Muffin Mix: I love using the double dark chocolate muffin mix because it’s so so chocolate-y. I’m confident that any of their protein muffin mixes will work if you want to switch up the flavor profile 🥰.
  • Fairlife Core Power Chocolate Protein Shake: Same goes with the Core Power! I like to use the chocolate flavor, but any of their flavors will work for this recipe.
  • Eggs: Don’t skip the eggs! I have not tested this recipe with any egg substitutes, so please proceed with caution if you decide to try it.

Optional: I like adding chocolate chips to these muffins and then sprinkling a little sea salt on the tops. While these are both optional, I highly recommend 🫶🏻.

Storage

These muffins will keep for 2-3 days in an airtight container on the counter. Or, to extend their freshness, store them in the fridge in an airtight container for up to 5 days.

More Muffin Recipes

  • Preheat the oven to 350℉ and line a muffin tin with muffin liners, then spray with cooking spray.

  • Add the dry muffin mix, Farilife protein shake, and eggs to a large bowl and whisk until well combined.

  • Fill each muffin well with ¼ cup of the batter. Then place in the oven and bake at 350℉ for 18 minutes.

  • Remove from oven and let cool. Sprinkle on some flakey sea salt and serve.

  • I used a chocolate protein shake for this recipe, but vanilla would be a great substitute.
  • I tested this recipe with both the chocolate chip and double dark chocolate Kodiak Cakes muffin mix flavors.

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, cream the softened vegan butter, brown sugar, and granulated sugar until light and fluffy.
