I started making this air fryer grilled cheese recipe last spring for my son Ollie, and it’s since become my favorite way to make a grilled cheese. Sure, it’s pretty simple to cook one on the stovetop, but using the air fryer is even easier. Here’s why:

  • I use sliced, not grated, cheese. Sandwich assembly is quick and easy!
  • Cleanup is a breeze. There’s no skillet to wash after cooking.
  • You can set it and forget it. When I make a grilled cheese on the stove, I’m always adjusting the heat to find the right balance of browning the bread and melting the cheese. In the air fryer, you can leave the temperature the same for the entire cook time. Just remember to flip halfway through.

Soft and wobbly with a subtly sweet soybean flavor, silken tofu is a versatile ingredient that takes on the flavor of any sauce or condiment. It’s just one member of a larger soybean curd family that includes tofu skin, tofu puffs, and firm tofu—all varieties I keep in the back of my fridge or freezer. But melt-in-my-mouth, luxurious silken tofu is all I need to bring my favorite dishes together at a moment’s notice. 

I started reaching for silken tofu regularly a few years ago, when I moved to New York. I’d eaten silken tofu plenty of times in miso soup and mapo tofu, but I never thought it could star as the main component of a complete meal. That all changed one night when my roommates and I, hungry from a night wandering the city, spotted silken tofu in our neighborhood’s 24-hour bodega. I immediately thought of the refreshingly cold, savory tofu pudding with chili sauce I’d eaten at the Manhattan Chinatown institution Fong On and decided to recreate something similar. 

We went home, and I gently steamed the tofu in the microwave for a few minutes, then doused it with soy sauce and chili oil. We dug our spoons slowly into the block and savored each creamy, salty bite, and the tofu disappeared in seconds, leaving a pool of burgundy-tinged soy sauce on the plate.

Since then, I’ve taken liberties with the recipe instructions and further reduced the prep time. Many recipes recommend poaching, steaming, or even microwaving silken tofu before incorporating it into a recipe, as it supposedly improves the tofu’s texture. However, I haven’t found a difference, so I prefer to skip this step. I simply open the package of tofu, drain the excess liquid, and plop the tofu onto a plate. I know I talk a lot about childhood food memories, but honestly, those simple dishes are still some of my favorites. My dad was (and still is) a very uncomplicated cook. Cook the noodles according to the package directions, as each brand will vary a little. I usually boil mine just like spaghetti — and honestly, spaghetti works here too if that’s what you have!

Step 2: Make the sauce

While the noodles are cooking, mix together the tamari, hoisin sauce, and toasted sesame oil. Add a splash of water to thin it out. That’s it — nothing fancy!

Sometimes I like to mix up my own hoisin sauce using tamari, honey, garlic, rice vinegar, sesame oil, white miso paste, Chinese five-spice, and black pepper. If you feel like going the extra step, it’s so flavorful.

Step 3: Cook the chicken and vegetables

In a large skillet, cook the chicken with garlic, chili flakes, and butter until browned. Add in your veggies — use whatever you love most. I went with shaved zucchini and red bell peppers. Cook until the chicken is fully done and the vegetables have softened.

Step 4: Toss it all together

Pour the sauce over the chicken and veggies, then add the noodles. Toss everything together and cook for just a couple of minutes until the sauce coats the noodles, chicken, and vegetables. Be careful not to overcook — this part happens fast!

Serve the lo mein in bowls topped with lots of toasted sesame seeds, fresh basil, and green onions.

Cook 12 oz. spaghetti in a large pot of boiling salted water until very al dente, about 1 minute less than package directions. Drain, reserving 2 cups pasta cooking liquid.

Meanwhile, place 4 oz. pancetta (Italian bacon), cut into ¼” pieces, in a cold, dry medium Dutch oven or other heavy pot and set over medium-high heat. Cook pancetta, stirring often, until browned and crisp, about 5 minutes. Using a slotted spoon, transfer pancetta to a small bowl, leaving fat behind in pot.

Pour extra-virgin olive oil into fat in pot so you have 3 Tbsp. total. Step 1

Stir 2 Tbsp. oyster sauce, 2 Tbsp. sambal oelek, 2 Tbsp. unseasoned rice vinegar, 1 Tbsp. fish sauce, and 1 Tbsp. dark brown sugar in a small bowl to combine; set sauce aside.

Heat 1 Tbsp. vegetable oil in a large skillet over medium-high until oil begins to smoke. Add two thirds of ½ medium head of green cabbage (about 1¼ lb.), cored, leaves cut into 2″ pieces, and cook, undisturbed, until dark brown and blistered in spots, about 3 minutes. Meanwhile, mix 1 lb. ground chicken, beef, or pork, 1 Tbsp. vegetable oil, 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt, ½ tsp. baking soda, and remaining ½ tsp. dark brown sugar in a medium bowl until well combined.

Step 4

Heat remaining 1 Tbsp. vegetable oil in reserved pan over medium-high. Add chicken mixture and cook, breaking up any large clumps of meat with a wooden spoon or heatproof rubber spatula, until browned and nearly cooked through, about 5 minutes. Add 6 garlic cloves, thinly sliced, one 1″ piece ginger, peeled, very finely chopped, and most of 1 bunch scallions, thinly sliced, and cook, tossing often, until softened and very fragrant, about 2 minutes. Add reserved sauce and cook, tossing occasionally, until thickened, 1–2 minutes.

Step 5

Return cabbage to skillet and add 2 Tbsp. unsalted butter. Cook, tossing often, until butter is melted and cabbage is glossy, about 1 minute. Serve stir-fry topped with remaining scallions.

I won’t lie—I still make boiled corn on the cob and grilled corn on the cob for summer cookouts and BBQs. But when I want to make a small batch in as little time as possible, this air fryer method can’t be beat. It’s perfect for weeknight dinners with my family of three or when I’m cooking fresh corn to use in a salad or dip.

How to Make Air Fryer Corn on the Cob

This air fryer corn on the cob recipe starts with 4 basic ingredients: fresh sweet corn, olive oil, salt, and pepper.

Start by prepping the corn. Remove the husks and silks, then rinse the ears and pat them dry. Place them on a large plate, rub them with olive oil, and season them with salt and pepper.

Then, cook the corn. Preheat your air fryer to 400°F, if your air fryer requires preheating. Place the corn in a single layer in the air fryer basket and cook until the kernels are bright yellow and tender, about 8 to 10 minutes. Two tips:

  1. Leave a little space between the ears. If they’re crowded together, they won’t cook evenly!
  2. Don’t overdo it. It might be tempting to cook corn on the cob in the air fryer until the kernels are very charred, but keep in mind that the kernels dry out as they darken. For the juiciest corn, stop cooking when the kernels are bright yellow and tender.

  • White Jasmine Rice (or basmati rice) – this rice cooks up quickly in the instant pot and pairs perfectly with the shrimp.
  • Mango salsa – Use a store bought mango salsa to make this recipe easy. I love Newman’s Own, but you could use whatever you love.

How to make blackened shrimp bowls

Make the rice: Rinse the rice well, add it to the instant pot with 2.25 cups of water. Cook on high pressure 3 minutes. Once it’s done cooking, you can manually release the pressure.

Season and cook the shrimp: Add blackening seasoning to the shrimp. Spray pan with avocado oil or olive oil spray then add shrimp, cook 2-3 minutes, flip and cook 1-2 minutes more.

Make the beans: Drain and rinse the black beans well. Add the black beans, salt, garlic powder and mango salsa to a pot. Heat over medium heat 3-4 minutes until heated through, stir regularly.

Assemble the dish: add rice to a bowl, top with blackened shrimp, black beans, tomatoes and cubed avocado.

Use frozen pre-cooked rice and make this dish in 10 minutes. You can buy frozen rice or make a large batch and freeze the rice in 1/2 – 1 cup portions for easy defrosting.

What if you don’t have blackening seasoning

You can make your own blackening seasoning or use cajun seasoning + ¼ teaspoon cayenne pepper.

To make your own blackening seasoning, combine:

  • 1 tablespoon paprika
  • ½ tablespoon garlic powder
  • ½ tablespoon salt
  • ½ tablespoon chili powder
  • ½ teaspoon dry ground mustard
  • ¼ teaspoon cayenne pepper

What if the shrimp is not defrosted

Shrimp defrosts rather quickly, it takes about 1 hour. If you want to cook the shrimp from frozen, I recommend that you cook the frozen shrimp in the air fryer.

To defrost shrimp, place a sealed bag of shrimp in cold water on the counter, changing out the water every 20-30 minutes. The shrimp should be fully defrosted in 1 hour.

Storing leftovers

This blackened shrimp rice bowl is great as leftovers the next day. I would recommend waiting to add the avocado and tomato until right before serving.
