Creamed Corn Recipe – Love and Lemons http://livelaughlovedo.com/food-and-drink/creamed-corn-recipe-love-and-lemons/ http://livelaughlovedo.com/food-and-drink/creamed-corn-recipe-love-and-lemons/#respond Fri, 05 Sep 2025 10:45:21 +0000 http://livelaughlovedo.com/2025/09/05/creamed-corn-recipe-love-and-lemons/ [ad_1]

Learn how to make creamed corn! This easy recipe combines fresh or frozen corn kernels with a cheesy, creamy sauce. It’s such a comforting side dish!

Creamed corn

Don’t buy creamed corn in a can—this recipe is easy to make from scratch! It calls for 8 basic ingredients, comes together in a single skillet, and tastes SO much better than any canned cream corn I’ve tried. Creamy, cheesy, and packed with crisp, juicy sweet corn, it’s a delicious, comforting side dish.

You can make this recipe with fresh or frozen corn, but through September, while corn is still in season, I’ll be making it on repeat with fresh. I love the intense sweetness and satisfying crunch of the peak-season kernels in this dish. That said, if you want to make this recipe outside of corn season, frozen corn is your best bet. It’ll be sweeter and juicier than out-of-season fresh stuff.

Creamed corn recipe ingredients

Creamed Corn Ingredients

Here’s what you’ll need to make this creamed corn recipe:

  • Sweet corn, of course! Fresh or frozen corn works here. If you’re using frozen, thaw it in the microwave or at room temperature before you start to cook.
  • Unsalted butter and flour – They create a roux that thickens the cream sauce.
  • Whole milk – I prefer it to heavy cream here. It creates a slightly lighter sauce that lets the corn flavor shine. For a richer sauce, replace some or all of the milk with heavy cream.
  • Garlic – Its savory flavor balances the corn’s sweetness.
  • Freshly grated Parmesan cheese – It helps thicken the sauce and adds nutty, umami flavor.
  • And salt and pepper – To make all the flavors pop!

Find the complete recipe with measurements below.

How to Make Creamed Corn

The first step in this easy creamed corn recipe is making a roux. Melt the butter in a large skillet over medium heat. Add the flour and cook, stirring, for 1 minute.

Then, simmer the sauce. While whisking, gradually pour in the milk. Simmer over low heat until the milk is thick enough to coat the back of a spoon, 5 to 10 minutes.

Next, add the corn, along with the garlic, salt, and pepper. Continue simmering until the sauce is thick and creamy, 17 to 20 minutes.

Finally, add the cheese and season to taste. Enjoy!

Recipe Tips

  • Add the milk gradually. If you pour it in all at once, the butter and flour will create lumps that are almost impossible to whisk out. For a smooth sauce, pour in the milk a little at a time, whisking constantly as you pour.
  • Adjust the consistency if needed. If the corn mixture ends up with a thicker texture than you’d like, don’t worry! Simply thin it out by adding an extra splash of milk.

What to Serve with Creamed Corn

This recipe is a versatile side dish! Serve it as part of a weeknight dinner with any simply cooked protein, or add it to a BBQ menu with black bean burgers or veggie burgers.

It’s also a great choice for a holiday meal. Add it to your Thanksgiving table with any of these other Thanksgiving side dishes!

How to Store Creamed Corn

Creamed corn is a great side dish to make ahead—it keeps well in an airtight container in the refrigerator for up to 4 days.

Gently reheat it on the stovetop or in the microwave, adding a little milk to loosen it if necessary.

Learn how to caramelise onions that are deliciously rich and sweet every time with this easy to follow recipe.

How to Caramelise OnionsHow to Caramelise Onions

Caramelised Onions

Though easy to make, caramelised onions do take some time as well. They need to be cooked slowly over a low heat to get the best flavour while not burning them.

As onions are naturally sweet, slowly cooking them for an extended period of time allows the natural sugars to caramelise, resulting in deliciously flavourful onions.

What Onions to Use?

You can use any onion you have, though brown or red onions tend to work the best. I love using brown onions as they turn a lovely golden colour when caramelised. Red onions tend to be a mix of purple and brown in colour.

Caramelised Onions Notes

  • The best caramelised onions are cooked low and slow.
  • Use a wide pan instead of a saucepan to give the onions space to lay in a single layer as this helps the water from the onions to evaporate faster.
  • Use a sharp knife to cut the onions and don’t cut them too thinly as they may start burning before they caramelise.
  •  Add a pinch of salt at the beginning of cooking as it helps draw out the moisture from the onions.
  • Add the sugar and vinegar after the onions have been cooking for a little bit and have become soft and are just starting to go a golden colour.
  • Butter can be used instead of olive oil, though it does have a tendency to burn the onions more but butter does add more flavour.

Using Caramelised Onions

Caramelised onions can really be used for anything.

  • As a side dish
  • Use instead of regular onions in dishes that call for cooked onions for additional flavour
  • Top steaks, baked chicken or fish with them
  • Add to sandwiches and burgers
  • Use in tarts, quiches and dips
  • Sprinkle on top of pizza
  • Add to onion soup

Ingredients for Caramelised Onions

  • 3 TBSP Olive Oil, more as needed
  • 5 Large Onions, finely sliced
  • Pinch Salt, optional
  • 1 tsp Brown Sugar, optional
  • 1 TBSP Balsamic vinegar, optional

Making Caramelised Onions

Heat a large skillet over medium heat.

Add 2 TBSP of the olive oil.

How to Caramelise Onions adding the finely sliced onions to skilletHow to Caramelise Onions adding the finely sliced onions to skillet

Finely slice the onions and add to the skillet.

Add the salt if using at the start. If using brown sugar or balsamic vinegar, add after the onions have been cooking for about 10 minutes.

How to Caramelise Onions cooking the onionsHow to Caramelise Onions cooking the onions

Cook for 20 to 30 minutes, stirring occasionally. Stir only enough to prevent them burning. If you stir too much, they won’t caramelise.

Add additional oil or a little water as needed to prevent burning. Balsamic vinegar can help with stopping the onions from sticking to the pan.

Reduce the heat to low and continue to cook for another 15 to 30 minutes until the onions are caramelised.

To speed up the cooking process, add a small amount of salt, balsamic vinegar and / or brown sugar. However, by adding any of these ingredients, the taste and the texture of the caramelised onions will be altered.

Storing Caramelised Onions

Once cooled, store in an airtight container in the fridge for up to one week.

Caramelised onions can be frozen in a freezer-safe container for up to three months. For portion sizes, freeze in ice cube trays, then pop them out and store in a freezer-safe zip lock bag in the freezer until needed.
