This is a variation of the roasted tomato soup recipe I featured in Super Natural Cooking. I love it because it’s one of those recipes that is quite simple, but the results are absolutely chef’s kiss. You use just a handful of ingredients – tomatoes, garlic, red pepper, etc. – then slice and roast them to the point of browning and collapse. Puree, season with a kiss of smoked paprika, and enjoy. That’s it.

Roasted Tomato Soup: Inspiration

The inspiration for this soup came years ago when I picked up a Mariquita Farm Mystery Box.  So heavy, I suspect it weighed in the thirty pound range. The bus was overflowing with a rainbow of produce – little gem lettuce, Hungarian spicy peppers, lacinato kale, Danish carrot beets, minicor carrots, tomatoes, sweet peppers, chard and scallions. Hidden beneath the rest of it, at the very bottom, so as not to crush her leafy neighbors, was a hefty rouge vif d’estampe pumpkin the color of a fiery sunset. Plenty to keep the kitchen lively in the coming week. But we started by reaching for the tomatoes – slicing them, dicing, and enjoying them raw. And there *still* were plenty that needed to be used up. I thought of the roasted tomato soup in Super Natural Cooking, fired up the oven, and started slicing.

Roasted Tomato Soup: Variations

  • Too Hot To Use The Oven: Use the grill to cook everything in place of the oven. Puree, load with toppings and enjoy!
  • Make it Chunky: Save a few of the roasted tomatoes from the blender. Chop those by hand and stir them back in after blending the rest.
  • Serve it Chilled: I tend to serve this soup heated, but you can serve it hot, cold – or whatever the weather calls for. And you can do it a day or two in advance if need be, it keeps well refrigerated.

This blistered shishito peppers recipe is the simplest summer appetizer. It relies on just 3 main ingredients—shishito peppers, salt, and oil—but it’s still flavorful, satisfying, and totally addictive. You might think you’re going to eat one pepper, maybe two, but before you know it, you’ll have devoured half the pan! Um…yes, I’m speaking from experience.

If you’re not familiar with shishito peppers, they’re small, thin-walled peppers that are traditionally used in Japanese and Korean cooking. These days, you can often find them at farmers markets and at major grocery stores like Whole Foods and Trader Joe’s. Most of the time, shishitos have a sweet, mild flavor, but rumor has it that one in every ten peppers is spicy. If you’re sensitive to spice, be careful when you bite into one of these blistered shishito peppers!

How to Cook Shishito Peppers

This recipe is my favorite method for how to cook shishito peppers. It’s insanely easy, which makes it a great last-minute appetizer or side dish. Here’s how it goes:

First, preheat a cast-iron pan over high heat. No need to worry about heating oil in the skillet—we’re going to cook the peppers in the dry pan.

When the skillet is hot, cook the peppers. Do your best to arrange them in a single layer in the skillet. Then, cook over high heat, tossing occasionally, until they’re tender and blistering.

Finally, serve! Drizzle the blistered shishitos with olive oil and season them with salt. Add a squeeze of lemon juice to take them over the top.

Variation: Blistered Padrón Peppers

Padrón peppers are small Spanish peppers that are very similar to shishitos. The major difference between the two is that Padrón peppers are more likely to be spicy.

In the US, Padrón peppers are harder to find than shishitos are, but if you can get your hands on some, feel free to use them in this recipe. Topped with olive oil and lemon, they’re a classic addition to a tapas spread. I love them so much that I actually shared a recipe for them in The Love & Lemons Cookbook!

How to Serve Blistered Shishito Peppers

When shishito peppers are in season, this recipe becomes one of my go-to appetizers. I typically serve them in one of two ways:

  • With olive oil, lemon juice, and sea salt. A little lemon zest is lovely here too!
  • With toasted sesame oil and toasted sesame seeds. I love this version with a tasty dipping sauce, like my peanut sauce or sesame ginger dressing. In a pinch, plain tamari or soy sauce is also great.

Serve them with drinks for a fun summer happy hour, or make them part of a larger meal. They pair well with Asian-inspired dishes like soba noodles and okonomiyaki. I also like them with classic cookout fare. Serve them as a side dish with veggie burgers or black bean burgers, and they’ll vanish in no time.

Strawberry Lemonade

This drink is so easy to make, all you need is lemon juice, fresh strawberries that have been pureed, a sweetener of your choice such as sugar, honey or maple syrup, water and ice. It has both a sweet and a tart flavour, that makes this non-alcoholic drink a great beverage for the whole family.

Lemonade Notes

  • With everyone having different personal tastes, you may want to switch up the ratio of lemons, strawberries and water to make the perfect blend for you and your family.
  • You can freeze this lemonade to have on hand, especially if you have an excess of lemons and strawberries.
  • Add sparkling water or soda water to the pitcher in step 5 instead of still water.
  • Serve with lemon slices or fresh mint as garnishes
  • Try using rose water in your lemonade for a lovely taste
  • Garnish with a sprig of fresh rosemary, thyme or lavender
  • If you would like it sweeter, try increasing the amount of sweetener

Ingredients for Making Strawberry Lemonade

To make 6 servings of this lemonade, you will need:

  • 1 Cup Freshly Squeezed Lemon Juice
  • 455g Strawberries that have been cleaned and hulled
  • 8 Cups of Water – Divided
  • 1 Cup of Sweetener such as sugar, honey, agave or maple syrup

Making Strawberry Lemonade

Add the freshly squeezed lemon juice to a large pitcher, one that holds at least 2 litres in total.

Puree the strawberries in a blender with one cup of water.

Strain to remove the seeds and pulp and add the rest to the pitcher.

Add the sweetener to a large saucepan and heat with 1 cup of water. Boil until the sweetener has dissolved. Remove from heat and allow to cool.

Add the remaining 6 cups of water to the pitcher and follow this with the cooled syrup.

Stir well to blend.

Chill until ready to serve.

Add ice to a large glass and pour over the strawberry lemonade.

Storing Fresh Lemonade

The concentrate in this recipe can be frozen and used to make lemonade whenever you want.

To do this, mix the cooled syrup, the lemon juice and pureed strawberries together in a jug and then pour into a freezer safe bag and freeze. Frozen correctly, it will last for up to 5 months.

To use, allow the mixture to thaw and then add it to a pitcher with water until you reach the desired taste.
