The Le Meurice Raspberry Negroni by Margot Lecarpentier


The Dorchester Collection’s Le Meurice hotel in Paris has partnered with legendary French bartender Margot Lecarpentier to launch Les Jeudis du Dalí – a weekly night of live entertainment and signature cocktails.

Founder of celebrated cocktail bar-cum-bistro, Combat, in Paris’s 19th arrondissement, Lecarpentier was dubbed “most influential bartender” by the World’s Best Bar list in 2020 for her inclusive, pretension-free take on mixology. Since opening in 2017, Combat has quietly risen to become one of the city’s coolest hangouts, with stylish Parisians drawn to the come-as-you-are vibe (and the great menus).

It wasn’t until 2022 that she came into contact with Alain Ducasse (who oversees Le Meurice’s Michelin-starred flagship restaurant) when the chef stumbled upon her bar. When their shared love for pioneering flavors became apparent, Ducasse invited Lecarpentier to join his restaurant group as executive cocktail chef. The recipes she has created for Les Jeudis du Dalí are directly inspired by the dishes created by Ducasse and his team at Le Meurice.

Hosted in the hotel’s Restaurant Le Dalí – an elegant dining destination designed by Philippe Starck – by a resident DJ, Les Jeudis du Dalí will usher in an era of laidback buzz for the hotel. Alongside a selection of Lecarpentier’s cocktails, each of which has been imagined specifically for the new weekly party, guests can enjoy sweet treats such as Alain Ducasse chocolates and Cédric Grolet pastries.

Adding to the theater of the evening, each cocktail will be mixed, poured and served tableside from a traveling cocktail cart. Included in the new menu is the Raspberry Negroni, which adds raspberry brandy to the classic gin, vermouth and Campari cocktail for a fruity twist.

Ingredients:

– 20ml gin

– 10ml raspberry brandy

– 10ml berry-infused gin

– 20ml Campari

– 20ml Punt E Mes vermouth

To garnish:

– Sage tincture 

Method:

Pour the two gins, brandy, Campari and vermouth into a mixing glass filled with ice and stir thoroughly. Strain the mixed cocktail into a fresh glass (either a martini or Nick & Nora glass) with no ice. Spray the glass with sage tincture to finish.
